Slow Cooker French Dip Sliders

Tender chuck roast, slow-cooked until it shreds with a fork, piled onto soft slider buns with melty Havarti or Provolone cheese. Serve with the warm broth on the side for dipping, and you've got an easy, mostly hands-off dinner the whole family will eat.

Ingredients

  • 2 tablespoon olive oil
  • 2-3 lb chuck roast
  • 2 packets onion soup mix
  • 2 ½ cups beef broth
  • 1 package slider buns 12 sliders
  • Havarti or provolone slices
  • 2 tablespoon butter
  • ½ teaspoon onion powder

Instructions

  • Heat 2 tablespoon of olive oil over medium-high heat in a large skillet OR a slow cooker with the saute/brown function.
  • Sear the chuck roast 3-4 minutes on each side, until browned.
  • If using a skillet, transfer the chuck roast to a large slow cooker.
  • Sprinkle the onion soup mix and beef broth over the chuck roast and cook on low for 8-9 hours or high for 4-5 hours, until the beef is shreddable.
  • Shred the beef.
  • Preheat oven to 350 degrees F.
  • Place the bottoms of the sliders into a 9x13" or 11x11" pan that has been lined with foil or parchment.
  • Top with the shredded beef.
  • Top the beef with slices of cheese and then the slider bun tops.
  • In a small bowl, whisk together the melted butter and onion powder.
  • Brush the bun tops with melted butter and cover with foil.
  • Bake for 20-25 minutes, until cheese is melted.
  • Serve and enjoy!

Notes

  • Reserve the broth from the slow cooker to serve alongside the sliders as a dipping au jus.
  • Store leftover beef in an airtight container in the fridge for 3 to 4 days.
