Slow Cooker Chicken Wild Rice Soup

- 1 yellow onion diced
 - 4 medium carrots diced
 - 4 celery stalks diced
 - 1 lb boneless skinless chicken breasts
 - 1 teaspoon poultry seasoning
 - 4 cloves garlic minced
 - 1 cup wild rice
 - 5 cups chicken broth
 - ½ teaspoon salt
 - 6 tablespoon unsalted butter
 - ½ cup all-purpose flour
 - 1 cup whole milk
 - fresh parsley chopped, for topping
 - ½  cup sliced almonds  (optional but delicious!
 
 
In a large slow cooker, add the onion, carrots, celery, chicken, garlic, poultry seasoning, salt, wild rice, broth, and salt.
Cook on low for 7-8 hours or high for 3-4 hours.
Remove the chicken from the slow cooker and shred.
Return the chicken to the slow cooker.
In a skillet or saucepan over medium heat, add the butter.
Once melted, sprinkle the flour over the butter and whisk together to form a paste. Cook for 1 minute.
Slowly whisk in the milk, until the milk is thickened into a cream sauce.
Add the cream sauce to the slow cooker and stir to combine. Season with additional salt and pepper, to taste.Optional: stir in the almonds.  Serve topped with fresh parsley. Enjoy!
