Roasted Shrimp Cocktail

Ingredients

  • 2 lbs shrimp peeled, de-veined, tail-on (12-15 count)
  • 2 tablespoon olive oil
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • 2 cloves garlic minced
  • zest from 1 lemon
  • juice from 1 lemon

Instructions

  • Preheat the oven to 425 degrees F.
  • In a large bowl, add the shrimp, olive oil, Italian seasoning, red pepper flakes, salt, garlic, lemon zest, and lemon juice.
  • Toss well to combine.
  • Evenly spread out on a parchment lined baking sheet.
  • Bake in the preheated oven for 8-10 minutes. The shrimp should be pink throughout and curled.
  • Serve with shrimp cocktail sauce. Enjoy!

Notes

  • You can serve this immediately or store in the refrigerator until ready to serve. 
  • It can be served warm or cold.
  • Store leftovers in an airtight container in the fridge for 2-3 days.
