Ingredients

  • 2 large sweet potatoes
  • ¼ cup honey
  • 3 tablespoon olive oil
  • 2 teaspoon hot sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼-1/2 teaspoon red pepper flakes depending on how spicy you want it
  • diced green onions or chopped parsley for garnish and flavor

Instructions

  • Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
  • Prep the sweet potatoes by slicing them into bite-sized pieces. I like to cut the sweet potatoes into ~¼" rounds and then cut the rounds into quarters.
  • In a small bowl, whisk together the olive oil, honey, hot sauce garlic powder, red pepper flakes, and salt. Add pepper to taste/preferenc.
  • Drizzle the honey mixture over the sweet potatoes and toss to combine.
  • Spread the sweet potatoes out onto the prepared baking sheet in a single layer.
  • Bake for 20 minutes, toss, and then bake for another 10 minutes.
  • Serve topped with chopped green onions or parsley. Enjoy!
