Cucumber Caprese Salad

- 2 cucumbers peeled and diced (I did the zebra peel for mine - leaving little stripes of the peel)
- 1 pint cherry or grape tomatoes halved
- 16 ounce log of fresh mozzarella cut into small pieces (or the mozzarella balls would work well too)
- 3 tablespoons fresh basil chopped (about 12 leaves)
For the dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic
- ¼ teaspoon salt
- dash of pepper
Combine salad ingredients in a large bowl.
Combine dressing ingredients in a small bowl and whisk to combine.
Pour dressing over salad and toss to combine.
Serve and enjoy!
