Crockpot Marry Me Chicken Pasta

Ingredients

  • 1 white onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ¼ cup sun-dried tomatoes packed in oil chopped
  • 1 pound boneless skinless chicken breasts diced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup chicken broth
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • ½ cup Parmesan cheese
  • 1 cup chopped spinach

Instructions

  • Optional: Sauté the onion in olive oil in a large skillet or in the slow cooker with the sauté function prior to adding the other ingredients. Not required but I like sautéing the onions prior to cooking them in the slow cooker
  • Add the onion, olive oil, Italian seasoning, sun-dried tomatoes, chicken, salt, and pepper to the slow cooker.
  • Pour in the chicken broth and stir to combine.
  • Cover and cook on low for 3 hours.
  • Stir in the ditalini pasta and heavy cream.
  • Cover and cook on low for 30 more minutes, until the pasta is tender.
  • Stir in the Parmesan and chopped spinach and cook until wilted.
  • Serve warm topped with additional Parmesan cheese.

Notes

  • Store leftovers in an airtight container in the fridge for 3 to 4 days.
  • Not recommended for freezing, as the cream sauce may separate once thawed.
