- 3 tablespoon butter
- 1 white onion diced
- 3 large carrots peeled and diced
- 3 celery stalks diced
- ½ teaspoon salt plus more, to taste
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- 6 cups chopped cabbage
- 6 Yukon gold potatoes diced
- 5 cups chicken broth
- ½ cup heavy cream
- chopped chives for topping
In a large soup pot, heat the butter over medium-high heat. Add the chopped onion, carrots and celery and cook until softened, about 5-7 minutes.
Add the garlic and Italian seasoning and cook another minute or two.
Add the kielbasa and cook another few minutes.
Add the cabbage, potatoes, and broth.
Bring to a boil, reduce head to medium, and let simmer for about 15-20 minutes, until the potatoes and cabbage are tender.
Remove about 2 cups of the broth and vegetables. Pick out any pieces of kielbasa. Transfer to a blender and puree until smooth.
Return the pureed mixture to the pot along with the cream and stir to combine. Season with additional salt and pepper, to taste. Simmer a few more minutes until soup is warmed through.
Serve topped with chopped chives and enjoy!
