Brioche Pumpkin French Toast Casserole

This Brioche Pumpkin French Toast Casserole is a make-ahead breakfast with soft, custardy brioche soaked in a spiced pumpkin custard, topped with a buttery brown sugar pecan streusel. Prep it the night before and bake it fresh in the morning.

Ingredients

French Toast Casserole

  • 1 lb loaf brioche* 1 lb. day-old brioche bread, cut into 1-inch cubes
  • 2 tablespoons melted butter slightly cooled
  • 9 large eggs
  • 1 cup pumpkin puree
  • 1 cup milk
  • ½ cup heavy cream
  • 2 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup brown sugar packed
  • 1 tablespoon vanilla extract

Streusel

  • ½ cup all-purpose flour
  • ½ cup brown sugar packed
  • 1 teaspoons ground cinnamon
  • ¼ cup melted butter
  • ½ cup chopped pecans

Instructions

  • If baking right way, preheat your oven to 350 degrees F.
  • Cut the brioche into 1-inch cubes. If it isn't already stale, dry it out in a 350°F oven for 8 to 10 minutes.
  • In a large bowl, whisk together the cooled melted butter, eggs, pumpkin puree, milk, heavy cream, pumpkin pie spice, salt, brown sugar, and vanilla extract.
  • Arrange the brioche cubes evenly in a greased 9x13" casserole dish.
  • Pour the custard mixture over the bread and gently press down so the bread is mostly covered.
  • At this point you can cover and refrigerate overnight. If baking immediately, continue on.
  • In a separate bowl, stir together the flour, brown sugar, cinnamon, and melted butter until combined. Cover and refrigerate if chilling the casserole overnight.
  • If ready to bake, sprinkle the streusel over the French toast casserole, followed by the chopped pecans.
  • Bake in the preheated oven for 35 to 40 minutes, until the middle is set, tenting with foil if the top browns too quickly. Add 5-10 minutes if baking it from the refrigerator.
  • Let sit for 5 to 10 minutes before serving.
  • Serve with maple syrup or powdered sugar. Enjoy!

Notes

*If your brioche isn't a day or two old, cut it into cubes, spread them on a baking sheet in a single layer, and bake at 350 degrees F for 8-10 minutes to dry them out a bit.
