Air Fryer Chicken Meatballs

A large batch of air fryer chicken meatballs - they're perfect to make for a crowd or freeze half for later!

Ingredients

  • 2 lbs ground chicken
  • 1 ¼ cups breadcrumbs
  • 15 ounces whole-milk ricotta
  • 2 large eggs
  • 1 shallot finely diced
  • ½ cup shredded Parmesan cheese grated also works
  • ¼ cup chopped parsley
  • 3 cloves garlic minced
  • 1 teaspoon salt

Instructions

  • In a large bowl, combine all of the meatball ingredients.
  • Preheat the air fryer to 400 degrees F. Line the air fryer basket with parchment paper.
  • Using a cookie scoop, form the meatball mixture into meatballs, and place on a baking sheet lined with parchment paper or a plate until ready to cook.
  • Working in batches, add a single layer of meatballs to the air fryer basket.
  • Air fry for 10 minutes, or until the internal temperature of the meatballs is 165 degrees F.
  • Enjoy!

Notes

This makes a large batch of meatballs. You can half the recipe or freeze the leftovers.
