Green Goddess Chicken Salad

Ingredients

  • 12 ounces shredded rotisserie chicken
  • ½ cup plain Greek yogurt I use whole milk greek yogurt
  • ¼ cup mayonnaise
  • juice from ½ lemon
  • 1 tablespoon white vinegar
  • 2 tablespoon fresh basil
  • 2 tablespoon fresh dill
  • 2 tablespoon fresh parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 shallot diced
  • 3 stalks celery finely chopped

Instructions

  • In a food processor or blender, add the Greek yogurt, mayonnaise, lemon juice, vinegar, herbs, salt, and pepper and blend until smooth. Add 1 tablespoon of milk or water if needed to thin it out a bit.
  • Add the chicken, shallot, celery, and Green goddess dressing to a large bowl and toss to combine.
  • Serve and enjoy!
