Ground Beef Ramen Noodles

An easy, family favorite recipe for ramen noodles made with ground beef.

Ingredients

  • 1 lb ground beef
  • 2 cups broccoli slaw or coleslaw mix
  • ½ cup soy sauce I use low sodium
  • cup honey or brown sugar
  • 1 tablespoon sesame oil
  • 2 teaspoon fresh ginger grated
  • 5 cloves garlic minced
  • 2 ½ cups water
  • 12 ounces ramen noodles any seasoning packet, discarded
  • chopped green onions

Instructions

  • In a small to medium bowl, whisk together the soy sauce, sesame oil, ginger, garlic, and honey. Set aside.
  • In a large skillet, cook the ground beef over medium-high heat, breaking it up into smaller chunks as it cooks.
  • Add the broccoli slaw to the beef mixture, mix well, and cook another 4-5 minutes, until slightly softened.
  • Add the sauce, mixing well to combine, and then stir in the water.
  • Add the ramen noodles, tucking it into the liquid as much as possible. Don't worry if it isn't covered!
  • Bring to a boil, reduce heat to low, cover, and simmer for 10-12 minutes, stirring every few minutes, and flipping the ramen noodles as needed.
  • Serve topped with chopped green onions. Enjoy!

Notes

Storage - store leftovers in an airtight container in the refrigerator for up to 4-5 days.
Prep Ahead - if you want to save yourself some time, you can prep the sauce mixture ahead of time.
Toss the Seasoning Packet - I don't use the seasoning that comes with the noodles, as it would make these noodles way too salty.
