Ingredients

  • 1 lb bacon
  • 1 large yellow onion
  • ¼ cup brown sugar
  • ¼ cup maple syrup
  • 2 tablespoon apple cider vinegar
  • ½ cup strong coffee
  • cup water
  • ½ teaspoon salt

Instructions

  • Cut the bacon into small pieces, about ¼-1/2" wide.
  • In a medium to large skillet, cook the bacon until browned. Don't let it get too crispy.
  • Remove the bacon from the skillet, along with all but 2 tablespoon of the bacon grease.
  • Add the onions and cook until slightly softened, about 5 minutes.
  • Add the brown sugar and stir to combine. Reduce the heat to low and cook another 15-20 minutes, until the onions are caramelized.
  • Add the maple syrup, apple cider vinegar, coffee, water, salt, and bacon to the skillet and stir well to combine.
  • Cook another 20 minutes, until the liquid has mostly evaporated and it is a thickened consistency.
  • Use immediately or store in a glass Tupperware and refrigerate.
  • Enjoy!
