- 1 lb bacon
- 1 large yellow onion
- ¼ cup brown sugar
- ¼ cup maple syrup
- 2 tablespoon apple cider vinegar
- ½ cup strong coffee
- ⅓ cup water
- ½ teaspoon salt
Cut the bacon into small pieces, about ¼-1/2" wide.
In a medium to large skillet, cook the bacon until browned. Don't let it get too crispy.
Remove the bacon from the skillet, along with all but 2 tablespoon of the bacon grease.
Add the onions and cook until slightly softened, about 5 minutes.
Add the brown sugar and stir to combine. Reduce the heat to low and cook another 15-20 minutes, until the onions are caramelized.
Add the maple syrup, apple cider vinegar, coffee, water, salt, and bacon to the skillet and stir well to combine.
Cook another 20 minutes, until the liquid has mostly evaporated and it is a thickened consistency.
Use immediately or store in a glass Tupperware and refrigerate.
Enjoy!
