Lasagna Roll Ups with Meat Sauce
A hearty recipe for lasagna roll ups that the whole family will love! It's pure comfort food and can also be made in big batches and made into a freezer meal.

Meat Sauce
- 1 lb ground beef
- 1 white onion diced
- 24 ounce jar marinara
Filling
- 15 ounce ricotta
- 1 large egg
- 2 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 ½ cups shredded mozzarella cheese divided use
- ½ cup shredded Parmesan cheese
- 2 tablespoon chopped fresh parsley
Meat Sauce
In a large skillet, cook the ground beef until brown, breaking it into small chunks as it cooks.
Add the onion and cook another 4-5 minutes, until slightly softened.
Add the marinara and stir well to combine. Remove from heat.
Filling
While the pasta water is heating, make the filling.
Combine the ricotta, egg, Italian seasoning, salt, pepper, 1 cup of mozzarella cheese, Parmesan cheese, and parsley, and stir well to combine.
Assembly
Preheat the oven to 375 degrees F.
Spread ½ cup of the meat sauce onto the bottom of a 9x13" baking dish.
Lay the al dente lasagna noodles out. I like to put them on a baking sheet to contain the messiness.
Spread ~2 tablespoon of filling onto each lasagna noodle.
Spread ~1 tablespoon of the meat sauce on top of the ricotta filling.
Roll them up into lasagna rolls.
Place the rolls into the baking dish.
Spread the remaining meat sauce on top of the rolls, followed by the remaining 1 ½ cups of mozzarella cheese.
Cover with foil and bake in the preheated oven for 35-40 minutes, remove the foil, and bake another 5 minutes.
Serve and enjoy!
Freezer Instructions
Prepare the rolls up to the baking step. Cover and freeze.
Thaw in refrigerator overnight.
Bake in 375 degree oven covered in foil for 45 minutes and then remove the foil and bake for 5-10 more minutes.
