Grilled Hawaiian Sausage and Vegetables

This grilled dinner recipe is so easy and delicious, filled with Andouille sausage, peppers, summer vegetables, pineapple, and an easy marinade!

Ingredients

  • ½ cup pineapple juice
  • 2 tablespoon olive oil
  • 2 tablespoon soy sauce
  • cup brown sugar
  • 3 cloves garlic, minced
  • 4 Andouille sausage links cut into bite-sized pieces (I used Aidell's brand)
  • 1 cup diced pineapple
  • 1 orange bell pepper stem and seeds removed, sliced
  • 1 zucchini cut into bite-sized pieces
  • 2 cups fresh trimmed green beans

Instructions

  • In a small bowl, whisk together pineapple juice, olive oil, soy sauce, brown sugar, and garlic.
  • Combine marinade with sausage, peppers, zucchini, and green beans.
  • Preheat grill to medium-high heat.
  • Add sausage and vegetables to a grill pan and grill for 15-20 minutes, until the vegetables are cooked and the sausage is browned. (I used pre-cooked/smoked sausage so I didn't have to worry about it being cooked through)
  • Serve with rice, and enjoy!

Freezer Meal Instructions:

  • To make this a freezer meal, omit the zucchini and green beans - they don't freeze and thaw well. Instead, add another bell pepper. Combine sausage, peppers, and marinade ingredients in a freezer bag and freeze. When you're ready to cook, thaw in the refrigerator overnight and cook as directed. You can add the zucchini and green beans at this point, if desired!
