Southwestern Chicken Kale Salad

For the Dressing:
- ¼ cup mayonnaise
- ½ cup plain Greek yogurt
- ¼ cup salsa
- 2 tablespoons taco seasoning
- 2 tablespoons fresh lime juice
- 1 tablespoon milk
For the salad:
- 8 cups tuscan kale roughly chopped
- 2 cups shredded chicken breast
- 1 red bell pepper seeds and white part removed, and diced
- 1 ½ cup frozen corn thawed
- 1 cup diced cherry tomatoes
- 1 15 oz can black beans, drained and rinsed
- 4 green onions diced
- ¼ cup fresh cilantro chopped
- 1 avocado diced
To make the dressing:
Combine all dressing ingredients in a small food processor and pulse until smooth and combined.
In a large bowl, combine kale, chicken, bell pepper, corn, tomatoes, and black beans.
Add dressing and toss well to combined.
Top with green onions, cilantro, and avocado, lightly tossing to combine.
Serve and enjoy!
