Southwestern Chicken Kale Salad

Ingredients

For the Dressing:

  • ¼ cup mayonnaise
  • ½ cup plain Greek yogurt
  • ¼ cup salsa
  • 2 tablespoons taco seasoning
  • 2 tablespoons fresh lime juice
  • 1 tablespoon milk

For the salad:

  • 8 cups tuscan kale roughly chopped
  • 2 cups shredded chicken breast
  • 1 red bell pepper seeds and white part removed, and diced
  • 1 ½ cup frozen corn thawed
  • 1 cup diced cherry tomatoes
  • 1 15 oz can black beans, drained and rinsed
  • 4 green onions diced
  • ¼ cup fresh cilantro chopped
  • 1 avocado diced

Instructions

To make the dressing:

  • Combine all dressing ingredients in a small food processor and pulse until smooth and combined.
  • In a large bowl, combine kale, chicken, bell pepper, corn, tomatoes, and black beans.
  • Add dressing and toss well to combined.
  • Top with green onions, cilantro, and avocado, lightly tossing to combine.
  • Serve and enjoy!
