Slow Cooker Split Pea Soup

- 1 white onion diced
- 3 carrots peeled and diced
- 3 stalks of celery diced
- 3 cloves garlic minced
- 1 lb dried split peas
- 2 cups diced ham
- 1 bay leaf
- 2 teaspoon fresh thyme
- 1 teaspoon salt
- fresh chopped parsley for topping
- 4 cups vegetable broth
- 1-2 cups water depending on how thick you like it
Add all of the ingredients except the parsley to the slow cooker.
Stir well.
Cook on low for 8 hours.
Once cooked, the peas will break down and naturally thicken the soup.
Serve topped with fresh parsley. Enjoy!
