Ingredients

  • 4 tablespoons olive oil
  • juice from 1/2 a lemon
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1/2 tablespoon dijon mustard
  • 2 cloves garlic minced
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 4 cups about 1 bunch tuscan kale, chopped
  • 3 cups about 1/2 a medium head red cabbage, shredded
  • 2 cups about 10 oz grape tomatoes, diced
  • 1 14 oz can chickpeas, drained and rinsed
  • 1/2 cup shredded Parmesan cheese

Instructions

  • Combine all dressing ingredients in mason jar and shake vigorously to combine well.
  • Place kale in large bowl.
  • Pour 1/2 of the dressing over the kale and, with your fingers, work the dressing into the kale leaves.
  • Add red cabbage, grape tomatoes, and chickpeas to kale mixture and add remaining dressing, tossing to combine.
  • Top with shredded Parmesan cheese.
  • Enjoy!
