In large saucepan, cook sausage. Remove from pan and set aside.
In same saucepan, heat olive oil over medium-high heat.
Add peppers and onion and cook until peppers become soft, about 8-9 minutes.
Add salt, Cajun seasoning, and garlic and cook 1 more minute.
Return sausage to pan.
Next, add the tomato sauce and stir to combine.
Lastly, add the cream and stir to mix thoroughly. Cook over medium heat for about 3-4 more minutes, making sure everything is thoroughly mixed.
Meanwhile (I did this while my peppers were cooking), bring vegetable broth to a boil.
Add polenta and salt and stir well to combine.
Reduce heat to low, cover, and let simmer for about 10 minutes.
After 10 minutes, add ¼ cup of cream and stir.
Add more cream if desired, until it reaches your desired consistency.
Add cheeses and stir to combine.
Add butter and stir even more.
Serve immediately with sausage and pepper sauce on top.
