Air Fryer Salmon Tacos

Spicy Pickled Red Onions
- 1 large red onion sliced
- 1-2 jalapeños sliced
- ¾ cup apple cider vinegar
- 1 cup water
- 2 tablespoon sugar
- 1 teaspoon salt
Lime Crema
- 1 cup plain yogurt
- juice from 2 limes
- dash of salt
Salmon
- 2 medium to large salmon filets 1-1.5 lbs total
- 1 tablespoon olive oil
- juice from ½ lime
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
Topping
- fresh cilantro for topping
Spicy Pickled Red Onions
Slice the red onions and jalapeño and place them in a large jar or glass tupperware.
In a saucepan or small pot, add the apple cider vinegar, water, sugar, and salt, and bring to a boil, stirring to dissolve the sugar and salt.
Pour the hot mixture over the onions and jalapeño. Cover with lid and then refrigerate for at least 4 hours.
Salmon
In a small bowl, mix together the olive oil, lime juice, chili powder, cumin, garlic powder, and salt.
Brush the mixture over the salmon filets.
Cook the salmon in the air fryer at 400 degrees for 10 minutes, or until flaky. I like to put a piece of parchment paper under the filets to make them easy to remove. The cooking time will vary slightly depending on the thickness of your salmon, but generally 10 minutes is perfect.
Flake the salmon and then add them to tacos shells. We like to use corn tortillas. Top with pickled onions, lime cream and, fresh cilantro.
