Ingredients

  • 2 15 ounce cans black beans drained and rinsed
  • 1 red bell pepper stems and seeds removed, diced
  • 1 orange or yellow bell pepper stems and seeds removed, diced
  • 1 red onion finely diced
  • 4 roma tomatoes diced
  • 5 green onions chopped
  • 28 ounces frozen corn thawed
  • ½ cup chopped cilantro
  • 3 cloves garlic minced
  • juice from 2 limes
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • 2 tablespoon olive oil

Instructions

  • Combine all of the ingredients in a large bowl.
  • Mix well.
  • Refrigerate until you're ready to eat. Serve with tortilla chips.
  • Enjoy!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days.
