Monster Cookie Oat Balls

Monster Cookie Oat Balls are a healthy oat ball recipe inspired by my favorite cookies - Monster Cookies! These oat balls are filled with oats, almond flour, peanut butter, honey, chocolate chips, butterscotch chips, and M&Ms.

Ingredients

  • 2 ½ cups quick oats
  • cup almond flour
  • 1 cup peanut butter I used natural creamy peanut butter
  • ½ cup honey
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • cup semisweet chocolate chips
  • ¼ cup butterscotch chips
  • ¼ cup M&Ms

Instructions

  • In a large bowl, combine the oats, almond flour, peanut butter, honey, vanilla, and salt, and mix to combine.
  • Stir in the chocolate chips, butterscotch chips, and M&Ms.
  • Roll them into balls. Place them on a covered plate or in a Tupperware and refrigerate until ready to eat.
  • Enjoy!
  • Store in an airtight container in the refrigerator.

Notes

Quick Oats vs Old Fashioned Oats - you can really use either, but my kids prefer the version with quick oats as they are less chewy. I like them both ways!
Use Mini Chocolate Chips - I used regular size chocolate chips this time when I made them, but I love using mini chocolate chips because they distribute around more evenly and result in less big chunks throughout the oat balls.
Peanut Butter Chips - if you're not a fan of butterscotch, you can swap them for peanut butter chips or just add more chocolate chips.
Storage - store these oat balls in an airtight container in the fridge for up to 7 days.
