- 2 lbs red new potatoes quartered
- 2 tablespoon olive oil
- 1 teaspoon herbes de provence
- ½ teaspoon salt
- ½ red onion thinly sliced
- ½ cup kalamata olives chopped
- ¼ cup parsley chopped
Dressing
- 3 tablespoon olive oil
- 1 ½ tablespoon red wine vinegar
- 1 tablespoon mayonnaise
- 2 cloves garlic minced
- ½ teaspoon salt
Toss the new potatoes in olive oil, herbs de Provence, and salt.
Place on a baking sheet and place them in a cold oven.
Set the oven to 450 degrees F and roast for 22-25 minutes.
Let cool.
Dressing:
To make the dressing, whisk together the olive oil, red wine vinegar, mayo, garlic, and salt.
In a bowl, combine the potatoes, red onion, olives, and parsley.
Drizzle with the dressing and stir to combine.
