Ingredients

  • 2 lbs red new potatoes quartered
  • 2 tablespoon olive oil
  • 1 teaspoon herbes de provence
  • ½ teaspoon salt
  • ½ red onion thinly sliced
  • ½ cup kalamata olives chopped
  • ¼ cup parsley chopped

Dressing

  • 3 tablespoon olive oil
  • 1 ½ tablespoon red wine vinegar
  • 1 tablespoon mayonnaise
  • 2 cloves garlic minced
  • ½ teaspoon salt

Instructions

  • Toss the new potatoes in olive oil, herbs de Provence, and salt.
  • Place on a baking sheet and place them in a cold oven.
  • Set the oven to 450 degrees F and roast for 22-25 minutes.
  • Let cool.

Dressing:

  • To make the dressing, whisk together the olive oil, red wine vinegar, mayo, garlic, and salt.
  • In a bowl, combine the potatoes, red onion, olives, and parsley.
  • Drizzle with the dressing and stir to combine.
  • Serve and enjoy!
