Buffalo Chicken Bowls

Buffalo Chicken
- 1.5 lbs boneless skinless chicken breasts
- ½ cup buffalo sauce I use a mild kind so my kids can eat it
Quinoa
- 1.5 cups quinoa
- 3 cups water or chicken broth
Toppings
- 1 avocado sliced
- 1 cup cherry or grape tomatoes halved
- 2-3 cups romaine lettuce chopped
- 3 carrots peeled and sliced
- 1-2 cups chopped cucumber
- ranch dressing, for drizzling homemade (recipe link in notes) or store-bought
- 1 cup blue cheese crumbles
- 2 green onions chopped
Chicken
Cook the chicken - you can bake, boil, or use your Instant Pot or Air Fryer. Whatever your favorite method is! You can also use rotisserie chicken. Once the chicken is cooked, toss it in the buffalo wing sauce.
Quinoa
Place quinoa and water/broth in a medium saucepan/pot.
Bring to a boil, reduce heat and cover.
Cook for 15-20 minutes, until the quinoa is flufffy.
Assemble
Place quinoa, toppings, and chicken in bowls. Drizzle with ranch, and sprinkle with green onions and blue cheese crumbles.
