Ingredients

  • 4 boneless skinless chicken breasts (about 2 lbs)
  • ¼ cup olive oil
  • 3 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh chopped rosemary
  • 2 cloves garlic minced
  • ½ teaspoon salt

Instructions

  • Pound the chicken breasts to even thickness.
  • In a bowl, stir together olive oil, lemon juice, lemon zest, rosemary, garlic, and salt.
  • Place chicken in a Tupperware container or a Ziplock baggie and then add the marinade. Stir well to combine.
  • Marinate for at least 30 minutes, or up to 8 hours.
  • Preheat the grill to medium-high heat.
  • Grill the chicken breasts for 6-8 minutes on each side, depending on the size and thickness of the chicken breasts. Use a meat thermometer to ensure they are 165 degrees F.
