- 4 boneless skinless chicken breasts (about 2 lbs)
- ¼ cup olive oil
- 3 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh chopped rosemary
- 2 cloves garlic minced
- ½ teaspoon salt
Pound the chicken breasts to even thickness.
In a bowl, stir together olive oil, lemon juice, lemon zest, rosemary, garlic, and salt.
Place chicken in a Tupperware container or a Ziplock baggie and then add the marinade. Stir well to combine.
Marinate for at least 30 minutes, or up to 8 hours.
Preheat the grill to medium-high heat.
Grill the chicken breasts for 6-8 minutes on each side, depending on the size and thickness of the chicken breasts. Use a meat thermometer to ensure they are 165 degrees F.
