Preheat the oven to 375 degrees F.
Grease your pie dish and then press the pie crust into the dish. Note: you can also use a pre-made frozen pie crust that is in a foil pie dish.
Parbake the crust in the oven for 10 minutes. While the crust is in the oven, prep the remaining ingredients.
In a large skillet over medium heat, add the butter .
Once the butter is melted, add the bell peppers and cook until softened, about 5-7 minutes.
Add the peppers, green onion, diced ham, and cheese to the bottom of the pie shell.
In a medium bowl, whisk together the eggs, cream, dijon, salt, and pepper.
Pour the egg mixture over the ham and veggies.
Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden brown. note: check the quiche around 30 minutes to make sure the crust is not browning too much. If it is, cover it with a pie crust shield or some foil.
Let it rest for 10 minutes and then slice and serve.
