Ham Pepper Quiche

Ham Pepper Quiche is a flavorful breakfast or brunch dish that is full of diced ham, pepper bells, eggs, dijon mustard, garlic powder, heavy cream, and lots of cheese! It's also a great use for leftover ham!

Ingredients

  • 1 deep dish pie shell can use refrigerated or frozen
  • 2 tablespoon butter
  • ½ red bell peppers stem and seeds removed, diced
  • ½ orange bell peppers stem and seeds removed, diced
  • 4 green onions diced
  • 1 ½ cups chopped ham
  • 1 cup shredded cheddar cheese
  • 5 large eggs
  • ¾ cup heavy cream
  • 2 teaspoon dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 375 degrees F.
  • Grease your pie dish and then press the pie crust into the dish. Note: you can also use a pre-made frozen pie crust that is in a foil pie dish.
  • Parbake the crust in the oven for 10 minutes. While the crust is in the oven, prep the remaining ingredients.
  • In a large skillet over medium heat, add the butter .
  • Once the butter is melted, add the bell peppers and cook until softened, about 5-7 minutes.
  • Add the peppers, green onion, diced ham, and cheese to the bottom of the pie shell.
  • In a medium bowl, whisk together the eggs, cream, dijon, salt, and pepper.
  • Pour the egg mixture over the ham and veggies.
  • Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden brown. note: check the quiche around 30 minutes to make sure the crust is not browning too much. If it is, cover it with a pie crust shield or some foil.
  • Let it rest for 10 minutes and then slice and serve.
