  • 1 lb ground turkey
  • 1 white onion diced
  • 1 red bell pepper stem and seeds removed, diced
  • 1 cup frozen corn
  • 1 packet taco seasoning
  • 10 ounce can enchilada sauce
  • 2 cups shredded cheddar cheese
  • 3-4 cups frozen tater tots

Instructions

  • Preheat the oven to 375 degrees F.
  • In a large cast iron skillet or pan, add 1 tablespoon olive oil and ground turkey over medium-high heat, breaking it into pieces as it cooks.
  • Once browned, add the remaining tablespoon of olive oil, the onion and red bell pepper, and cook another 3-4 minutes, until slightly softened.
  • Add the corn and stir to combine.
  • Add the taco seasoning along with ¼ cup of water, stirring well to combine.
  • Stir in the enchilada sauce, followed by the cheese.
  • Top with tater tots. Note: you can also transfer the mixture to a 9x13" baking dish if your skillet isn't oven-safe.
  • Bake in preheated oven for 30-35 minutes, until bubbling and tater tots are golden brown.
