Asian Turkey Rice Bowl

Ingredients

  • 2 tablespoon olive oil
  • ½ white onion diced
  • 1 red bell pepper stem and seeds removed, diced
  • 1 lb ground turkey I used 93/7
  • 2 cloves garlic minced
  • 1 teaspoon fresh minced ginger
  • 2 tablespoon brown sugar
  • cup soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon fish sauce
  • 1-2 tablespoon Sriracha adjust according to spice preference
  • 4 green onions diced

Rice

  • 1 ½ cups jasmine rice
  • 2 cups edamame shelled
  • fresh cilantro for topping
  • Chili garlic sauce or sweet chili sauce for topping

Instructions

  • In large skillet, heat olive oil over medium-high heat.
  • Add the onion and bell pepper and cook until slightly softened, about 3 minutes.
  • Add the garlic and ginger and cook one minute, stirring well.
  • Add the ground turkey and cook until browned and veggies are softened, breaking the turkey up into pieces as it cooks.
  • Add the brown sugar, soy sauce, rice vinegar, fish sauce, and Sriracha, stirring well to combine. Cook for 2-3 minutes.
  • Stir in chopped green onions.

Rice:

  • While the turkey is cooking, cook the rice according to package directions.

Assemble:

  • Serve Asian turkey on top of rice along with edamame. Top with additional green onion and chopped cilantro. We liked adding a drizzle of sweet chili sauce to ours, too!
