- 2 tablespoon olive oil
- ½ white onion diced
- 1 red bell pepper stem and seeds removed, diced
- 1 lb ground turkey I used 93/7
- 2 cloves garlic minced
- 1 teaspoon fresh minced ginger
- 2 tablespoon brown sugar
- ⅓ cup soy sauce
- 2 tablespoon rice vinegar
- 1 tablespoon fish sauce
- 1-2 tablespoon Sriracha adjust according to spice preference
- 4 green onions diced
Rice
- 1 ½ cups jasmine rice
- 2 cups edamame shelled
- fresh cilantro for topping
- Chili garlic sauce or sweet chili sauce for topping
In large skillet, heat olive oil over medium-high heat.
Add the onion and bell pepper and cook until slightly softened, about 3 minutes.
Add the garlic and ginger and cook one minute, stirring well.
Add the ground turkey and cook until browned and veggies are softened, breaking the turkey up into pieces as it cooks.
Add the brown sugar, soy sauce, rice vinegar, fish sauce, and Sriracha, stirring well to combine. Cook for 2-3 minutes.
Stir in chopped green onions.
