Sausage Croissant Breakfast Casserole

An easy and delicious make-ahead breakfast casserole recipe with sausage and croissants.

Ingredients

  • 1 lb Italian sausage
  • 6 cups cubed croissants about 5-6 croissants
  • 1 ½ cups shredded cheddar cheese
  • 8 large eggs
  • 1 ¼ cup milk
  • 2 teaspoon dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • In a skillet, brown the sausage over medium heat, breaking it into pieces as it cooks.
  • Spray a 9x13" baking dish with cooking spray.
  • Spread the cubed croissants on the bottom of the baking dish. Sprinkle with the cooked sausage and shredded cheese.
  • In a medium bowl, whisk together the eggs, milk, dijon mustard, salt, and pepper.
  • Pour the egg mixture over the croissants/sausage/cheese.
  • Cover and refrigerate overnight.
  • In the morning, preheat the oven to 350 degrees.
  • Bake the casserole in the preheated oven for 45-55 minutes, until golden brown and no longer wet in the middle.
  • Serve and enjoy!
