Banana Bundt Cake with Cream Cheese Frosting

A simple banana bundt cake recipe made with Greek yogurt, topped with a cream cheese frosting.

Ingredients

  • ½ cup unsalted butter at room temperature
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • ½ cup canola oil
  • 2 teaspoon pure vanilla extract
  • 4 medium bananas mashed (about 1 ¾ cups)
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 cups all-purpose flour
  • 1 cup whole milk Greek yogurt

For the Cream Cheese Frosting:

  • 6 ounces cream cheese at room temperature
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoon milk
  • cup chopped pecans

Instructions

  • Preheat the oven to 350 degrese F.
  • Grease a bundt cake pan with cooking spray and then sprinkle evenly with about 2 tablespoon of granulated sugar. Set aside.
  • In a large bowl with an electric mixer, beat together the butter and sugar until creamy, about 2 minutes.
  • Add the eggs, one at a time, mixing until well combined and scraping down the edges as necessary.
  • Add the oil, vanilla, and mashed bananas, mixing until combined.
  • Add the baking soda, cinnamon, and salt, mixing until combined.
  • Add half of the flour and mix to combine.
  • Add half of the Greek yogurt, and mix to combine. Repeat with remaining flour and Greek yogurt.
  • Pour the batter into the prepared bundt pan.
  • Bake in the preheated oven for 50-60 minutes, until golden brown on the top and a toothpick comes out clean.
  • Let cool for about 10 minutes in the pan. Run a knife around the egdes and flip onto a cooling rack to cool completely.

To Make the Frosting:

  • In a medium bowl, beat the cream cheese until fluffy, about 1 minute.
  • Add the powdered sugar, vanilla, and 2 tablespoon of milk and beat until well combined.
  • Add additional tablespoon of milk, if needed.
  • Spread over cooled cake.
  • Sprinkle with chopped pecans.
  • Serve and enjoy!
