- 24 ounces salmon cut into 4 6 ounce fillets, I used skin-on
- 2 tablespoon olive oil
- juice from 1 lime
- 1 teaspoon chili powder
- ¼ teaspoon cumin
- ½ teaspoon salt
Avocado Mango Salsa
- 1 avocado diced
- 1 mango peeled and diced
- 1 red bell pepper stem and seeds removed, diced
- 1 jalapeno pepper stem and seeds removed, diced
- ¼ cup diced red onion
- ¼ cup chopped cilantro
- juice from 1 lime
- ½ teaspoon salt
In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, and salt.
Brush the mixture over the salmon fillets and let marinate for 30-60 minutes.
Meanwhile, make the salsa.
Combine all salsa ingredients in a bowl. Refrigerate until ready to serve.
Grease your grill grates with oil.
Preheat the grill to medium-high heat.
Once the grill is hot, place the salmon on the grill, skin side down.
Cook for 5 minutes and then flip, cooking another 3-5 minutes, until the salmon flakes easily.
Serve topped with mango avocado salsa.
