Peanut Date Balls

- 1 ½ cups unsalted peanuts
- ½ teaspoon salt
- 16 ounces dates, pitted
- 1-2 tablespoon water, if needed
Place dates in a bowl and fill with warm water. Let them soak for about 10 minutes. Strain.
Place peanuts and salt in a large food processor and process until they resemble very fine crumbs.
Add the dates and pulse until a "dough" forms. This may take awhile and you may have to scrape down the sides a time or two. If the mixture seems dry, add additional water, 1 tablespoon at a time.
Form into balls of your preferred size. I usually get about 20-24 balls.
Store in the refrigerator in an airtight container.
