Equipment

  • Pressure Cooker

Ingredients

  • 2 cups steel cut oats
  • 4 cups milk (I used unsweetened vanilla almond milk)
  • 1 cup water
  • ½ cup maple syrup
  • 1 tablespoon coconut oil
  • 2 tsp pure vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

Instructions

  • Add all of the ingredients to the Instant Pot.
  • Cover with the lid and seal the vent.
  • Cook on HIGH for 4 minutes.
  • Let the pressure naturally release for 15 minutes.
  • Release the valve, releasing any remaining pressure (there shouldn't be much, if any), and remove the lid.
  • There may be liquid at the top and that is okay! Just stir it well and the oats will soak it up - I promise!
  • Serve topped with your preferred oatmeal toppings. I like bananas, nuts, and peanut butter. Other ideas: maple syrup drizzle, almonds, strawberries, blueberries, yogurt, almond butter, granola.
  • Enjoy!
