- 2 cups steel cut oats
- 4 cups milk (I used unsweetened vanilla almond milk)
- 1 cup water
- ½ cup maple syrup
- 1 tablespoon coconut oil
- 2 tsp pure vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon salt
Add all of the ingredients to the Instant Pot.
Cover with the lid and seal the vent.
Cook on HIGH for 4 minutes.
Let the pressure naturally release for 15 minutes.
Release the valve, releasing any remaining pressure (there shouldn't be much, if any), and remove the lid.
There may be liquid at the top and that is okay! Just stir it well and the oats will soak it up - I promise!
Serve topped with your preferred oatmeal toppings. I like bananas, nuts, and peanut butter. Other ideas: maple syrup drizzle, almonds, strawberries, blueberries, yogurt, almond butter, granola.
Enjoy!
