In a large bowl, add the peach slices, tomato slices, and red onion slices.
Add the olive oil, white balsamic vinegar, honey, salt, and pepper to a mason jar and shake well to combine.
Pour the dressing over the tomato and peach mixture and stir well to combine.
Top with goat cheese and basil, and toss gently.
Serve and enjoy!
Notes
*alternately, you can use ~2 cups of diced cherry tomatoes or 3 beefsteak tomatoes. This recipe is very loose - use whatever tomato variety you prefer!
