Ingredients

  • 3 ripe peaches pit removed and sliced
  • ~4 large Roma tomatoes* sliced
  • ¼ of a red onion very thinly sliced
  • ¼ cup olive oil
  • ¼ cup white balsamic vinegar
  • 1 tablespoon honey
  • salt and pepper to taste
  • 4 ounces crumbled goat cheese
  • ¼ cup fresh basil chopped

Instructions

  • In a large bowl, add the peach slices, tomato slices, and red onion slices.
  • Add the olive oil, white balsamic vinegar, honey, salt, and pepper to a mason jar and shake well to combine.
  • Pour the dressing over the tomato and peach mixture and stir well to combine.
  • Top with goat cheese and basil, and toss gently.
  • Serve and enjoy!

Notes

*alternately, you can use ~2 cups of diced cherry tomatoes or 3 beefsteak tomatoes. This recipe is very loose - use whatever tomato variety you prefer!
