Cobb Salad Lettuce Wraps

Cobb Salad Lettuce Wraps take all of the deliciousness of a cobb salad and puts it into a low-carb lettuce wrap! Now you can eat salad on the go!

Ingredients

  • Large lettuce leaves such as bibb or romaine
  • 16 ounces bacon
  • 6 large eggs
  • 8 ounces sliced turkey and ham deli meat
  • 1 large tomato sliced
  • Shredded cheddar cheese
  • ½ cup Blue cheese crumbles
  • ½ cup Ranch dressing

Instructions

  • Preheat oven to 425 degrees F.
  • Place bacon on a baking sheet (I line mine with aluminum foil). Bake in preheated oven for 15-20 minutes, until cooked to your preferred crispiness.
  • Let cool.
  • While the bacon is cooking, you can hard boil the eggs.
  • Bring a pot of water to boil. Carefully lower the eggs into boiling water and boil for 11 minutes. Immediately place eggs into ice bath and chill for 15 minutes.
  • To assemble, place desired amount of bacon, turkey, ham, tomato, cheddar cheese, and blue cheese into each lettuce leaf. Top with one sliced hard boiled egg and drizzle with ranch.
  • Wrap up and enjoy!
