Instructions
Cook Jennie-O Bone-In Cajun Spiced Turkey Breast according to package. Alternately, you can cook it in the slow cooker on high for 4 hours or low for 6-8 hours.
Remove the meat from the bone and shred.
In a large soup pot, heat olive oil over medium-high heat.
Add onion, red bell pepper, and green bell pepper, and stir to combine.
Cook for about 10 minutes, until the veggies are softened, stirring often.
Add garlic and Cajun seasoning, and cook another minute.
Add smoked turkey sausage, rice, and chicken broth.
Bring to a boil, reduce heat to medium, cover, and let simmer for 30-40 minutes, until rice is tender. If you use white rice, it will not take as long - closer to 20 minutes.
Ladle into soup bowls and top with green onion.
Enjoy!
Notes
Total cook time includes time for cooking turkey breast in slow cooker on low for 8 hours. If you cook it in the oven it will be less total time. I like to cook the turkey ahead of time and refrigerate it until I'm ready to cook the soup!
