Peach and Kale Salad with Honey Mustard Dressing

Ingredients

chopped kale

coleslaw mix
or 2 cups shredded cabbage and carrots

peaches
seed removed and sliced
½
cup
feta cheese
½
cup
pecans
For the dressing:
¾
cup
plain Greek yogurt
¼
cup
mayonnaise
2
tablespoons
honey
1
tablespoon
white wine vinegar
1
tablespoon
dijon mustard
2
tablespoon
olive oil
Instructions
Combine kale and coleslaw mix in a large bowl.
In a small bowl, combine dressing ingredients and whisk until combined.
Add ~½ of the dressing to the kale and coleslaw mixture and stir until evenly distributed.
Top salad with peaches, feta cheese, and pecans, and drizzle with as much of the remaining dressing as you want.
Serve and enjoy!
