Honey Coconut Cashew Granola

This coconut and cashew granola is naturally sweetened with honey!

Ingredients

  • 3 cups old fashioned oats
  • 1 ½ cups unsalted cashews roughly chopped
  • 1 cup unsweetened shredded coconut
  • ¼ cup whole flaxseed
  • ½ teaspoon cinnamon
  • ¾ teaspoon salt
  • ¼ cup coconut oil
  • ½ cup honey

Instructions

  • Preheat oven to 300 degrees F.
  • Line baking sheet with parchment paper.
  • Combine oats, cashews, coconut, flaxseed, cinnamon, and salt.
  • Stir well to combine.
  • In small bowl, combine coconut oil and honey.
  • Microwave for 20 seconds, until coconut oil is melted.
  • Pour over oat mixture and mix well until combined. You might think it's not going to be enough to coat everything, but keep stirring - it will!
  • Pour onto prepared baking pan.
  • Bake in preheated oven for 50-60 minutes, stirring every 15 minutes, until granola is golden brown.
  • Let cool, then enjoy!
  • Store in airtight container for up to one week.
