kimchi fried rice {with an egg on top}

A super easy fried rice with Kimchi, topped with a runny fried egg!
Servings: 2 servings with 1 egg each

Ingredients

  • 2 tablespoon vegetable oil
  • 1 cup Kimchi plus 1-2 tablespoon of Kimchi juice
  • 2 cups rice preferably day-old
  • 1 tablespoon soy sauce
  • 2 eggs
  • 2 tablespoon diced green onions

Instructions

  • In large skillet, heat 1 tablespoon vegetable oil over medium-high heat.
  • Add Kimchi, plus 1-2 tablespoon of some residual juice from the Kimchi to oil.
  • Cook for 3-4 minutes, then add rice and soy sauce, stirring to combine.
  • Cook another 3-4 minutes, stirring often, until rice is warm.
  • In a fry pan over medium heat, heat remaining tablespoon of oil and fry the eggs to your liking (fried, sunny side up, over easy, etc.)
  • Divide rice among two plates then top with one egg each.
  • Top with green onions.
  • Enjoy!
