kimchi fried rice {with an egg on top}
A super easy fried rice with Kimchi, topped with a runny fried egg!
Servings: 2 servings with 1 egg each
- 2 tablespoon vegetable oil
- 1 cup Kimchi plus 1-2 tablespoon of Kimchi juice
- 2 cups rice preferably day-old
- 1 tablespoon soy sauce
- 2 eggs
- 2 tablespoon diced green onions
In large skillet, heat 1 tablespoon vegetable oil over medium-high heat.
Add Kimchi, plus 1-2 tablespoon of some residual juice from the Kimchi to oil.
Cook for 3-4 minutes, then add rice and soy sauce, stirring to combine.
Cook another 3-4 minutes, stirring often, until rice is warm.
In a fry pan over medium heat, heat remaining tablespoon of oil and fry the eggs to your liking (fried, sunny side up, over easy, etc.)
Divide rice among two plates then top with one egg each.
Top with green onions.
