almond butter bars {gluten-free!}

Ingredients

  • 2 ½ cups almond meal
  • 1 ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup brown sugar you could also use honey
  • 2 eggs
  • 2 teaspoon pure vanilla extract
  • ½ cup almond butter
  • ½ cup melted coconut oil
  • ½ cup chocolate chips gluten-free if desired

Instructions

  • Preheat oven to 350 degrees F.
  • Lightly spray 8x8" baking dish with cooking spray and set aside.
  • Combine flour, baking soda, and salt in medium bowl. Set aside.
  • In large bowl, whisk together brown sugar, eggs, vanilla and almond butter.
  • Whisk in coconut oil and stir well to combine.
  • Add dry ingredients to wet ingredients and mix well with spatula. Batter will be pretty thick.
  • Fold in chocolate chips.
  • Spread into prepared baking dish.
  • Bake in preheated oven for 20-25 minutes, until golden brown.
  • Let cool and enjoy!
