strawberry avocado salsa with grilled salmon

Ingredients

for the salmon:

  • juice and zest of ½ orange
  • juice of 1 lime
  • salt and pepper to taste
  • 1 garlic clove thinly sliced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 4 salmon filets skin-on (approximately 6 ounces each)

for the strawberry-avocado salsa

  • 1 pint strawberries diced
  • 1 avocado diced
  • 1 jalapeno de-seeded and diced
  • ½ red onion finely diced
  • ¼ cup chopped cilantro
  • juice of 1 lime
  • juice of ½ orange
  • salt and pepper to taste

Instructions

To make the salmon:

  • Combine orange juice, orange zest, lime juice, salt, pepper, garlic clove, chili powder, and cumin.
  • Pour over salmon filets and marinate 30 minutes.
  • While the salmon is marinading, make the salsa.

To make the salsa:

  • Combine all ingredients in medium sized bowl. Refrigerate until needed.

To cook the salmon:

  • Preheat grill to medium-high heat.
  • Cook salmon, skin down, about 8-12 minutes depending on the thickness of your salmon and preferred doneness.
  • Top grilled salmon with strawberry-avocado salsa.
  • Enjoy!

Notes

The recipe for the salsa makes more than you'll need for the fish, but it is great eaten with chips, too! If you don't want leftovers, you can halve the recipe.
