Raspberry Baked Oatmeal

Raspberry Baked Oatmeal is an easy baked oatmeal recipe with old fashioned oats, maple syrup, milk, eggs, and fresh raspberries! Make it ahead for a quick breakfast or make this for a weekend brunch!

Ingredients

  • 3 cups milk I used unsweetened vanilla almond milk
  • 3 large eggs
  • cup maple syrup
  • ¼ cup yogurt plain or vanila works
  • 2 tablespoon melted butter
  • 1 teaspoon pure vanilla extract
  • 3 ½ cups old fashioned oats
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups fresh raspberries frozen would work, too

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, whisk together the milk, eggs, maple syrup, yogurt, melted butter, and vanilla until well combined.
  • Stir in the oats, baking powder, baking soda, and salt.
  • Fold in the raspberries.
  • Grease a 9x13" baking dish with cooking spray and pour in the oatmeal mixture.
  • Bake in the preheated oven for 40 minutes. It should be slightly golden brown and set in the middle.
  • Serve topped with additional milk or cream, or a dollop of yogurt.
  • Enjoy!

Notes

Store leftovers in an airtight container in the fridge for 4-5 days.
To reheat, drizzle with some milk and microwave for 60-90 seconds.
