Raspberry Baked Oatmeal

- 3 cups milk I used unsweetened vanilla almond milk
- 3 large eggs
- ⅓ cup maple syrup
- ¼ cup yogurt plain or vanila works
- 2 tablespoon melted butter
- 1 teaspoon pure vanilla extract
- 3 ½ cups old fashioned oats
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups fresh raspberries frozen would work, too
Preheat the oven to 350 degrees F.
In a large bowl, whisk together the milk, eggs, maple syrup, yogurt, melted butter, and vanilla until well combined.
Stir in the oats, baking powder, baking soda, and salt.
Fold in the raspberries.
Grease a 9x13" baking dish with cooking spray and pour in the oatmeal mixture.
Bake in the preheated oven for 40 minutes. It should be slightly golden brown and set in the middle.
Serve topped with additional milk or cream, or a dollop of yogurt.
Enjoy!
Store leftovers in an airtight container in the fridge for 4-5 days.
To reheat, drizzle with some milk and microwave for 60-90 seconds.
