In a bowl with electric mixer, beat together the butter and granulated sugar until creamy, about 1 minute.
Add the egg, vanilla extract, and almond extract, and beat to combine.
Add the flour, baking powder, and salt and beat until combined.
Refrigerate for at least 1 hour. This is important - otherwise the dough will be too sticky.
Preheat the oven to 350 degrees F.
Place dough on a floured surface.
Sprinkle some flour on top of the dough and flour the rolling pin, and roll out to approximately ⅛" thick. It should be about 12-14" in diameter.
Using a pizza cutter or a knife, cut into the shape of a heart.
*Note: you can roll the leftover dough into individual cookies and bak them, if you'd like. Otherwise, you can discard.
Carefully place the heart cookie dough on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12-14 minutes. The edge should be just slightly golden.
Let cool completely.
