Banana Oatmeal Chocolate Chip Cookies

Ingredients

  • 2 tablespoon butter, at room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 medium banana, mashed ~⅓ cup
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup whole wheat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cup old fashioned oats
  • 1 cup semisweet or dark chocolate chips

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a bowl, beat together the butter, granulated sugar, and brown sugar until well combined.
  • Add the mashed banana, egg, and vanilla extract, and beat until well combined.
  • Add the flours, baking soda, and salt, and stir until well combined.
  • Mix in the oats, followed by the chocolate chips.
  • Form the dough into tablespoon-sized dough balls and place on prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 9-11 minutes, until the edges are slightly golden.
  • Cool on baking sheet for 5 minutes, then transfer to cooling rack.
