In a large bowl, mix together the flour, baking powder, baking soda, and salt.
Mix in the chives, cheese, and chopped bacon.
With a cheese box grater, grate the cold butter. If you don't have a box grater, just cut it up into small pieces.
Add the butter to the flour mixture and stir until it resembles coarse crumbs or a very soft dough.
In a medium bowl, whisk together the buttermilk and maple syrup.
Add the buttermilk mixture to the dough and stir until combined.
Dump the dough onto a lightly floured mixture and slightly knead to get the dough completely combined.
Roll out into a rectangle that is approximately 1 ½" thick.
Using a biscuit cutter, cookie cutter, or a pizza cutter, cut out ~12 biscuits from the dough. Note: The number of biscuits will depend on how large your biscuit cutter is, but it should be between 10-12.
Place on a parchment paper lined baking sheet and freeze for 15 minutes.
Meanwhile, preheat the oven to 450 degrees F.
Prior to baking, mix the melted butter and maple syrup in a small bowl.
Brush over the biscuits before baking. There should be leftover which will be used after baking.
Bake the biscuits in the preheated oven for 14-16 minutes, until golden brown.
Immediately after baking brush with more of the butter/maple syrup mixture.
