Slow Cooker Pulled Pork Banh Mi

Ingredients

  • For the pork:
  • 2-3 lb pork shoulder/butt/roast
  • ¼ cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • For the quick pickled veggies:
  • 3 carrots shredded
  • 2 small radishes thinly sliced
  • ½ cup white vinegar
  • ½ cup sugar
  • ½ teaspoon salt
  • 6 crusty hoagie rolls
  • Cilantro
  • Mayonnaise

Instructions

  • To make the pork:
  • Place pork in slow cooker.
  • In bowl, whisk together marinade ingredients. Pour over pork.
  • Cook on low for 8 hours or high 3-4 hours, until pork shreds easily.
  • To make the veggies:
  • Combine vinegar, sugar, and salt, whisking until sugar is dissolved.
  • Add veggies and toss to combine.
  • Let sit for at least 30 minutes.
  • To make the sandwiches:
  • Shred the pork with two forks, keeping it in the liquid from the slow cooker.
  • Spread desired amount of mayo on each roll.
  • Top with pork, pickled veggies, and cilantro.
  • Enjoy!
