How was your weekend?  Mine was great!  Aside from getting to celebrate Father’s Day with my dad (yay!), it was also the weekend for our 2nd annual family bike ride.  Last year our ride got rained out and we only made it 7 out of the 40 miles, so this year we were extra determined to make it the entire way.

Saturday in the Twin Cities started out beautiful. Weather Channel even told me there was 0% chance of rain until 5:00 when there was a wimpy 20% chance.  I was excited for a sunny day of biking.  After getting all 14 of us in order and ready to go (2 hours later than planned), it was a little cloudy.  But no rain, so we were happy.  Unfortunately, between our first and second bar stop (and a head-first fall in the ditch for one unfortunate rider who shall remain un-named), the clouds got dark and a light mist eventually turned into a down pour.  There were soaked clothes, soaked shoes, and nowhere to hide.

When we finally made it to what we thought was near the second stop, we realized we still had at least 5 miles to go.  On a highway shoulder.  In a rainstorm.  God was looking after us though, and there just so happened to be a house out on the country road we were riding with a graduation party about to start, with a big tent.  The people having the party were the definition of “Minnesota Nice” and not only welcomed us into their garage, but also fed us, provided us all towels to dry off with, and gave my dad a ride to get his truck.  We ended up having to stay there for almost 2 hours (during which it rained at least an entire hour), so it’s an understatement to say that these people were our life savers.

So while the bike ride wasn’t a complete success, we definitely accomplished more than last year and had more than enough fun to make up for the rain.  Of course today was an absolutely gorgeous day for a bike ride.  Go figure.  Although the weather didn’t cooperate for our bike ride, it was a perfect day today for grilling.  I was craving something light and this salmon hit the spot.

I’m always a fan of fruit salsas, and this one is no exception.  I was actually a little skeptical of strawberry salsa, as it seems kind of “out there” but it was delicious.  Combined with the creamy avocado, jalapeno, cilantro, lime juice, and the fresh orange juice, it paired really well with the salmon.  The salmon marinates in a citrusy-marinade with orange juice, lime juice, cumin, and chili powder.  The flavors are simple, but so good.

This Strawberry Avocado Salsa with Grilled Salmon ended up being an easy Sunday night meal, as I made the salsa while the salmon was marinating, then all I had to do was put the salmon filets on the grill and let it do all the work for me.  Served with grilled corn on the cob, we were happy (and healthy!) eaters tonight!  Though that just gave more reason for dessert…come back later this week to find out what I made. for the salmon:

  • juice and zest of 1/2 orange
  • juice of 1 lime
  • salt and pepper to taste
  • 1 garlic clove thinly sliced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 4 salmon filets skin-on (approximately 6 ounces each)

for the strawberry-avocado salsa

  • 1 pint strawberries diced
  • 1 avocado diced
  • 1 jalapeno de-seeded and diced
  • 1/2 red onion finely diced
  • 1/4 cup chopped cilantro
  • juice of 1 lime
  • juice of 1/2 orange
  • salt and pepper to taste


To make the salmon:

  • Combine orange juice, orange zest, lime juice, salt, pepper, garlic clove, chili powder, and cumin.
  • Pour over salmon filets and marinate 30 minutes.
  • While the salmon is marinading, make the salsa.

To make the salsa:

  • Combine all ingredients in medium sized bowl. Refrigerate until needed.

To cook the salmon:

  • Preheat grill to medium-high heat.
  • Cook salmon, skin down, about 8-12 minutes depending on the thickness of your salmon and preferred doneness.
  • Top grilled salmon with strawberry-avocado salsa.
  • Enjoy!


The recipe for the salsa makes more than you'll need for the fish, but it is great eaten with chips, too! If you don't want leftovers, you can halve the recipe.

  1. That is great that you ran into such a nice group of people! Sounds like they took great care of you. I’m glad you were okay (I’m guessing it was you who felt head first in the ditch?). This salsa looks so good and I love that you used orange juice to cook the fish in. I bet this was really tasty!
