Sausage Croissant Breakfast Casserole is an easy, make-ahead breakfast recipe that is sure to be a crowd pleaser! It’s made with mild Italian sausage, croissants, eggs, milk, and cheddar cheese, and is perfect for a weekend breakfast or brunch.

I love a good breakfast casserole. There are just so many options when it comes to how to make them, and I love experimenting with them. While my Sausage Egg and Cheese Biscuit Breakfast Casserole is our go-to staple, this Sausage Croissant Breakfast Casserole is giving it a run for its money!

One of the things that stands out about this croissant breakfast casserole is that you can make it ahead of time. Prep the entire thing the night before and then all you have to do in the morning is pop it in the oven! That’s my ideal kind of weekend breakfast.

What You’ll Need

  • Croissants – note: these are different than crescent rolls!  I’m talking about the buttery, delicious croissants you’d buy from a bakery, not the ones from a can.
  • Ground Mild Italian Sausage – I love the flavor of Italian sausage, but you can use breakfast sausage too, if you prefer!
  • Eggs
  • Milk
  • Dijon Mustard
  • Cheddar Cheese
  • Salt and Pepper

How to Make Croissant Breakfast Casserole

To start, you’ll brown the sausage. Simply put it in a pan over medium heat and cook until it’s browned, breaking it into small pieces as you go. Oh and if you don’t have one of these for cooking ground meat, you’re missing out!

Next, cut the croissants into bite-sized pieces and place them in the bottom of a greased 9×13″ baking dish. Sprinkle the sausage and cheese on top of the croissants.

The next step is to whisk together the eggs, milk, dijon mustard, salt, and pepper in a bowl until it’s all well combined. Then pour it on top of the sausage and cheese. Cover, and refrigerate overnight!

The morning of, pull the casserole out while you preheat the oven. Then bake in the preheated oven for about 45-55 minutes. You’ll want the top golden brown and no longer “wet” on the top in the middle. It’s such an easy and delicious recipe!

I don’t think it’s any surprise that this breakfast casserole was gone in no time with my family. The combination of the buttery croissants with the sausage and cheddar cheese was pure perfection.

Ingredients

  • 1 lb Italian sausage
  • 6 cups cubed croissants about 5-6 croissants
  • 1 1/2 cups shredded cheddar cheese
  • 8 large eggs
  • 1 1/4 cup milk
  • 2 tsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • In a skillet, brown the sausage over medium heat, breaking it into pieces as it cooks.
  • Spray a 9×13" baking dish with cooking spray.
  • Spread the cubed croissants on the bottom of the baking dish. Sprinkle with the cooked sausage and shredded cheese.
  • In a medium bowl, whisk together the eggs, milk, dijon mustard, salt, and pepper.
  • Pour the egg mixture over the croissants/sausage/cheese.
  • Cover and refrigerate overnight.
  • In the morning, preheat the oven to 350 degrees.
  • Bake the casserole in the preheated oven for 45-55 minutes, until golden brown and no longer wet in the middle.
  • Serve and enjoy!
