Healthy Weekly Meal Plan Week of 10.31.15

HWMP Collage w veg Options Happy Halloween!  Any fun plans this weekend?  We are actually leaving town and heading up to the cabin for a little fall getaway.  Is it bad we’re skipping out on Lars’ first Halloween?  I actually do have a Superman costume for him (which is actually just a pair of Superman PJ’s but still…) so we’ll probably snap a few pics of him but it’s really just for the parents sake the first year or two, isn’t it?  That’s what I’ll tell myself.

This weeks meal plan might come especially in handy becayse 1) lots of fun things to do other than meal plan and 2) candy detox means healthy eating next week, right?!

We have lots of yummy things for you this week!  Just as a reminder: the printable meal plan with the grocery list is organized so you can cross off an entire recipe from your grocery list if you’re not planning to make every single recipe this week and it’s also color coded by type of grocery.  So green is produce, red is meat and dairy, and blue is “grocery” stuff like canned goods, spices, etc.

Sweet Potato and Lentil Chili from Making Thyme for Health.

Prep Ahead: You can cut the veggies (onion, peppers, garlic, and sweet potatoes) up to 2 days in advance and store in an airtight container in the refrigerator.

Prep Ahead: Veggies can be sauteed in advance (store in the refrigerator until ready to use). Or, the entire dish can be assembled completely, wrapped with foil or plastic wrap, and then stored in the refrigerator until ready to bake. Let it come back to room temp and then bake as directed (or until hot).

Prep Ahead: The rice can be cooked ahead of time and refrigerated until ready to use. You can also make the burger patties prior to cooking them, and/or freeze the veggie burgers.

30 Minute Farro “Fried” Rice from Flavor the Moments.

Prep Ahead: Prep veggies ahead, or buy pre-chopped veggies if really pressed for time.

Sausage and Kale Pasta with Feta Sauce from greens & chocolate.

Prep Ahead/Vegetarian option: Cook sausage a day in advance.  To make vegetarian, omit sausage and replace with garbanzo beans.
