Our healthy weekly meal plan makes weeknight dinners easy! Happy weekend! We got back from our anniversary trip to Banff on Monday and after a crazy couple o months this summer, I feel like we’re finally getting back into our normal routine. Which, if you’ve ever had a 15 month old, you know that’s a nice feeling. Traveling is great, but so is being home.
It’s also nice to get back into regular cooking and meal planning. I’ve been recipe testing lots of comfort foods this week (like this pumpkin chili!) and this weeks meal plan screams fall comfort food! Soup, mac and cheese, cheesy rice skillet, pulled chicken, and a pasta soup – so much yum!

Prep Ahead: The pulled chicken may be made in advance and stored in the fridge or even frozen until ready to heat and serve!
