I’ve said it before, but I’ll say it again: if there’s any indication of a good recipe, it’s that it is made over and over again. And then over again, if we’re talking about this grilled chicken with cilantro butter. I made this for the first time a couple of years ago and since have made it countless times. It’s pretty simple, really…it’s just grilled chicken breasts, topped with a flavor-packed cilantro butter right after the chicken gets off the grill. The butter gets all melty and covers the chicken with its flavorful goodness. It’s good stuff.
We came to the conclusion that you could really put this butter on top of anything and make it taste good. Well, maybe not anything but let’s explore some options: spread it on some bread and warm it in the oven, on top of fish or shrimp, with grilled vegetables, mixed in pasta, on top of a baked potato…the options are endless I’m telling ya!
Even better, this is such an easy recipe to prepare ahead of time. All you have to do when it comes time for dinner is grill up some chicken and slab on a pat of the butter. Paired with some grilled vegetables and some bread or pasta and you’ve got yourself a delicious meal.
Grilled Chicken Breasts with Cilantro Butter
from Food Network
2 lb (4 large) chicken breasts
2 tbsp olive oil
1/4 tsp kosher salt
1/8 tsp pepper
1/2 lb (1 stick) butter, softened
2 tbsp minced garlic
2 tbsp fresh cilantro, chopped
4 tbsp red onion, minced
1 tsp garlic powder
1 tsp kosher salt
1/2 tsp freshly ground pepper
Dash Worcestershire sauce
2 lemons, juiced
2 tbsp white wine
In a bowl, combine all ingredients until well combined. It will make it 1,000x easier if the butter is completely softened, so make sure it is very soft. Refrigerate before use.
To make chicken: preheat grill or grill pan over high heat. Lightly brush chicken breasts with olive oil and season with salt and pepper. Grill chicken breasts for about 4-5 minutes per side. The meat should be cooked completely through, and have an internal temperature of 165 degrees F.
Remove from grill and immediately top with cilantro butter.
